Bitterness: indicates a characteristic gustatory sensation of extra virgin olive oil obtained from green or slightly veraison (ripening) olives.
Fruitiness: indicates the aromatic intensity of an extra virgin olive oil both on the nose and the palate. It can be light, medium, or intense depending on the strength with which the aromas are perceived. The olive variety (cultivar) determines the category of fruitiness, but other factors are also decisive: the climate and soil where the tree grows; the timing of the harvest and delivery to the mill; the oil extraction method and its storage.
Pungency: indicates a sharp tactile sensation characteristic of extra virgin oils produced at the beginning of the season, primarily from green olives.
